Growing Up Caribbean Changed the Way I Cook

Growing up in a Caribbean-American household, food was never bland.

Garlic, citrus, thyme, curry, coconut, bold spices, and home-cooked meals were simply part of everyday life. Those flavors weren’t reserved for special occasions—they were how my family cooked and showed love.

When I started trying to lose weight, I did what so many of us do. I filled my plate with grilled chicken, steamed vegetables, and salads because I thought that was what “healthy eating” was supposed to look like.

It worked for a little while.

Then I got bored.

The meals didn’t feel satisfying, and I found myself falling back into the same cycle over and over again.

Eventually, I realized something important:

If I wanted to stay consistent, I had to enjoy what I was eating.

So instead of giving up the flavors I grew up with, I started adapting them.

White rice became cauliflower rice.

I kept the garlic, citrus, and bold seasonings.

I looked for small swaps that fit my goals without making dinner feel like punishment.

This baked salmon with creamy coconut cauliflower rice became one of those meals.

It’s simple enough for a busy weeknight, meal-prep friendly, and inspired by the flavors I grew up loving.

Why You’ll Love This Recipe

  • High in protein to help keep you satisfied.
  • Ready in about 30 minutes.
  • Great for meal prep.
  • Made with simple grocery store ingredients.
  • Inspired by Caribbean flavors without feeling complicated.
  • Perfect for busy weeknights when you still want something comforting.

Ingredients

For the Salmon

  • 2 salmon fillets (about 6 ounces each), fresh or thawed if frozen
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons minced garlic
  • 1½ teaspoons garlic powder
  • 1½ teaspoons onion powder
  • 1½ teaspoons smoked paprika
  • ¾ teaspoon black pepper
  • ½–¾ teaspoon Old Bay seasoning
  • ½ teaspoon Italian seasoning
  • Salt, to taste
  • ¼–½ teaspoon red pepper flakes (optional)

For the Creamy Coconut Cauliflower Rice

  • 1 bag frozen cauliflower rice
  • Chicken broth (or water, depending on your preference)
  • Salt and pepper, to taste

Coconut Lime Mixture

  • ½–1 cup canned coconut milk
  • Juice of ½ lime (or to taste)
  • Salt, to taste

Instructions

Step 1: Season the Salmon

Pat the salmon dry on both sides.

Rub both sides with the olive oil and lemon juice.

Add the minced garlic first, making sure it’s evenly spread over each fillet.

Season both sides with the garlic powder, onion powder, smoked paprika, black pepper, Old Bay, Italian seasoning, and salt.

If you like a little heat, sprinkle on some red pepper flakes.

My real-life tip: I know I’ve used enough seasoning when the salmon isn’t pink anymore.

Step 2: Bake

Place the salmon on a lightly greased baking sheet or baking dish.

Bake at 400°F for about 12–15 minutes, depending on the thickness of your fillets, until the salmon flakes easily with a fork.

If you like crispier edges like I do, pop it into the air fryer for 2–3 minutes after baking.

Step 3: Cook the Cauliflower Rice

I almost always use frozen bagged cauliflower rice because it’s affordable, convenient, and saves a ton of time on busy weeknights.

Most of the time, I skip the microwave and cook it on the stovetop instead.

Bring a mixture of half chicken broth and half water to a boil (or use all chicken broth if you have some you need to use up).

Add the frozen cauliflower rice and let it boil for 2–3 minutes. It cooks quickly, so keep an eye on it.

Drain any excess liquid, then season the cauliflower rice with salt and black pepper to taste before adding the warm coconut-lime mixture.

Real-life tip: If I’m in a hurry, I’ll microwave the cauliflower rice instead. But when I have a few extra minutes, boiling it in chicken broth gives it so much more flavor.

Step 4: Make the Coconut Lime Mixture

In a small saucepan over low heat, combine:

  • Coconut milk
  • Fresh lime juice
  • Salt

Warm gently while stirring.

Don’t let it boil.

You’re simply warming everything together so the flavors come together.

Step 5: Put It Together

Fold the warm coconut mixture into the cauliflower rice until lightly coated.

Serve alongside the salmon.

Or make it into a bowl.

Or spoon a little of the coconut mixture over the salmon.

There really isn’t a wrong way to enjoy it.

Meal Prep Tips

This recipe reheats well and makes a great lunch for work.

Store the salmon and cauliflower rice separately if possible.

Add fresh avocado when serving if you’d like an even heartier meal.

Make It Your Own

One of my favorite things about this recipe is that it’s flexible.

You can:

  • Add sliced avocado.
  • Sprinkle fresh parsley on top if you’re serving guests.
  • Finish with extra lime juice.
  • Add cracked black pepper.
  • Serve with your favorite hot sauce.

To be real? Most of the time I don’t garnish it at all.

I make it after work, put it on a plate, and enjoy it.

But if you’re making it for company, a little parsley and a lime wedge make it look beautiful.

Why This Recipe Stayed in My Rotation

During my weight-loss journey, I learned that I wasn’t going to stick with meals that felt bland or restrictive.

This dinner became one of my favorites because it reminded me of the flavors I grew up eating while still fitting the way I wanted to eat.

The oven does most of the work.

The cauliflower rice comes together in minutes.

The warm coconut-lime mixture makes everything feel comforting.

And the best part?

It never felt like “diet food.”

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat gently in the microwave or warm the salmon in the air fryer for a few minutes to bring back some crispness.
