Jamaican Jerk Chicken and Cabbage (An Easy High-Protein Weeknight Dinner)

Some of my favorite meals aren’t just recipes…they’re memories.

I grew up eating Jamaican food because someone who was incredibly close to my family loved to cook for us. He was one of the warmest, kindest people I’ve ever known, and some of my best memories are sitting down to meals that were full of bold flavors, good conversation, and a whole lot of love.

Jerk chicken has been part of my life for as long as I can remember.

As I’ve gotten older and started cooking more for myself, I’ve wanted to recreate those same flavors in a way that fits my everyday life. After a long day at work, I don’t want to spend three hours in the kitchen, but I also don’t want another bland chicken dinner.

This recipe gives me the best of both worlds.

It’s inspired by the Jamaican cooking I grew up around, made with ingredients I can easily grab at Walmart, and simple enough to get on the table in about an hour. Pair it with sautéed cabbage, and you’ve got a flavorful, high-protein meal that’s become one of my favorite weeknight dinners.

Food has always been more than just fuel to me. It’s comfort, it’s culture, and sometimes it’s one of the easiest ways to reconnect with the people and memories that shaped you. I hope this recipe brings a little of that warmth to your table, too.

  • Ready in about an hour
  • Full of bold Jamaican-inspired flavor
  • Easy enough for weeknights
  • Great for leftovers and meal prep

Ingredients

For the Jerk Chicken

  • 1 family pack chicken drumsticks or chicken thighs (about 3–4 pounds)
  • 4 cloves fresh garlic, minced
  • 3–4 tablespoons Jamaican jerk seasoning paste
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon seasoning salt (adjust to taste)
  • ½ teaspoon ground ginger
  • 1 teaspoon Italian seasoning (or fresh thyme if you have it)
  • ½ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons liquid smoke
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • Browning sauce (optional, for a richer color)

For the Cabbage

  • 1 large green cabbage, chopped
  • 1 package Cajun sausage or smoked sausage, sliced
  • 3 cloves fresh garlic, minced
  • 1 yellow onion, diced
  • 1 green bell pepper, sliced (optional)
  • 1–2 tablespoons olive oil
  • About ½ cup water
  • Garlic powder, to taste
  • Onion powder, to taste
  • Black pepper, to taste
  • Seasoning salt, to taste
  • Complete seasoning, to taste

How to Make the Jamaican Jerk Chicken

Step 1: Season the Chicken

Place the chicken in a large bowl.

Add:

  • Fresh minced garlic
  • Jamaican jerk seasoning paste
  • Garlic powder
  • Onion powder
  • Ground ginger
  • Italian seasoning
  • Seasoning salt
  • Liquid smoke
  • Crushed red pepper flakes (if using)
  • Browning sauce (if using)
  • Diced onion
  • Diced green bell pepper

Mix everything together until every piece of chicken is well coated.

My tip: I usually season the chicken before work, cover it, and let it marinate in the refrigerator all day. By the time I get home, all I have to do is pop it in the oven while I make the cabbage. It gives the chicken even more flavor without adding extra work.

Step 2: Bake

Arrange the chicken in a baking dish or sheet pan.

Bake at 400°F for 45–55 minutes, or until the chicken reaches an internal temperature of 165°F and the skin is beautifully browned.

If you’d like crispier skin, broil it for the last 2–3 minutes.

How to Make the Cabbage

While the chicken is baking, start the cabbage.

Heat a little olive oil in a large skillet or Dutch oven over medium heat.

Add the diced onion and cook until it begins to soften.

Stir in the minced garlic and cook for about 30 seconds, just until fragrant.

Add the sliced Cajun sausage and cook until it’s lightly browned.

Remove the sausage and onions from the pan and set them aside.

If needed, add another small drizzle of olive oil, then add the chopped cabbage.

Season generously with:

  • Garlic powder
  • Onion powder
  • Black pepper
  • Seasoning salt
  • Complete seasoning

Stir everything together so the cabbage is coated with the seasonings.

Pour about ½ cup of water into the pan, cover with a lid, and let the cabbage steam for about 15 minutes, stirring occasionally.

The cabbage should be tender but still have a little bite. You don’t want to cook it until it’s mushy.

Once the cabbage is cooked, stir the sausage and onions back into the pan and mix everything together.

Serve

Serve the jerk chicken with a generous helping of the sautéed cabbage.

It’s a simple, filling dinner that’s packed with bold flavor and made with everyday ingredients you can find at Walmart.

My Honest Take

I love meals that are full of flavor but don’t require me to spend all evening in the kitchen.

This is one of those dinners I can prep before work, let the chicken marinate all day, and then have dinner on the table about an hour after I get home.

When I was losing weight, recipes like this made healthy eating feel realistic. I wasn’t forcing myself to eat bland food—I was making meals I genuinely looked forward to.

If you’re someone who loves bold flavors, this recipe proves you don’t have to sacrifice taste to make a healthier, high-protein dinner.
