Garlic, herbs, curry, citrus, and home-cooked meals weren’t reserved for special occasions—they were simply part of everyday life.

Even though this is a Jamaican-inspired recipe, it’s one that’s stayed with me for years because of the people who shared it with me. The smell of curry simmering on the stove always reminds me why food is so much more than just what’s on our plates.

When I started trying to lose weight, I did what so many of us do. I filled my plate with plain grilled chicken, steamed vegetables, and salads because I thought that’s what “healthy eating” was supposed to look like.

It didn’t last.

Ingredients

For the Chicken

  • 5–6 chicken drumsticks or thighs (skin on or skin off)
  • 2 tablespoons olive oil
  • 2 tablespoons Jamaican curry powder (Grace or Caribbean Rhythm are my go-to brands)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon Italian seasoning (or fresh thyme if you have it)
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes (optional)

For the Curry

  • 1 white onion, diced
  • ½–1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • ½–1 cup chicken broth or water
  • 1–2 potatoes, peeled and cut into chunks (optional)
  • A few sprigs of fresh thyme

For the Cauliflower Rice

  • 1 bag frozen cauliflower rice
  • Chicken broth
  • Water
  • Salt
  • Black pepper

Instructions

Step 1: Season the Chicken

Start with clean, patted-dry chicken.

Season both sides with:

  • Jamaican curry powder
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Salt
  • Black pepper

If you like a little heat, sprinkle on some red pepper flakes.

There’s no need to marinate it. I usually season it and start cooking right away.


Step 2: Bloom the Curry

Heat the olive oil in a deep pot over medium heat.

Sprinkle in a generous amount of Jamaican curry powder and stir it into the oil.

This step is one of the secrets to a rich, flavorful Jamaican curry.

You’ll know it’s ready when:

  • the curry powder has dissolved into the oil
  • the oil turns a rich golden color
  • you hear the oil gently sizzling

Girl, don’t burn the curry.

It only takes a minute or two.

If the oil turns dark brown instead of golden yellow, it’s burned and can make the entire pot taste bitter.


Step 3: Brown the Chicken

Add the seasoned chicken to the pot.

Brown it for about 2–3 minutes per side.

You’re not trying to cook it all the way through here.

You’re just building flavor.

Once both sides are browned, remove the chicken and set it aside.


Step 4: Build the Curry

Using the same pot, add:

  • diced onion
  • minced garlic

Cook for 2–3 minutes until the onions begin to soften.

Add the diced green bell pepper and cook another 2–3 minutes.

Stir in just a little tomato paste.

My tip?

If your curry starts looking red instead of a rich golden yellow, you probably used too much tomato paste.

A little goes a long way.


Step 5: Simmer Everything Together

Return the chicken to the pot.

Pour in enough chicken broth (or water) to come about one-third of the way up the chicken.

Add:

  • fresh thyme
  • potato chunks (if using)

Cover the pot.

Let everything simmer over medium-low heat for 15–20 minutes, stirring occasionally so nothing sticks to the bottom.

The chicken should be tender, the potatoes fork-tender, and the gravy lightly thickened.


Step 6: Make the Cauliflower Rice

I almost always use frozen bagged cauliflower rice because it’s quick, affordable, and perfect for busy weeknights.

Bring a mixture of half chicken broth and half water to a boil. (Sometimes I use all chicken broth if I have some left over.)

Add the frozen cauliflower rice and boil it for about 2–3 minutes.

Drain any excess liquid.

Season with salt and black pepper to taste.


Step 7: Serve

Spoon the cauliflower rice onto your plate.

Top with the curry chicken.

Then don’t forget the best part…

Ladle plenty of that rich curry gravy over everything.

Trust me.

That’s where the magic happens.

One of my favorite things about this meal is that once the curry gravy soaks into the cauliflower rice, you barely notice you’re eating cauliflower.

The sauce does all the heavy lifting.
